All Bacon Freaks agree that BACON should be heavily consumed on Memorial Day. Made with ground bacon, ground pork and chorizo, these mildly spicy meatballs were created with carnivores in mind! They will easily satisfy your guests who are craving some meaty goodness. They’re also a great party appetizer for a barbecue or summer party. You could even grill them on the BBQ with a meatball griller. They can be made ahead of time and then re-heated in the oven. They are super easy to make and are a real crowd-pleaser. You may substitute coarse bread crumbs for the oatmeal and the pepper bacon provides enough seasoning. Amp up the spice level by adding sriracha or hot sauce. Enjoy!

Ingredients:
1 package  pepper bacon
1 lb. ground pork
One 12 oz. package chorizo
½ cup finely diced red onion
1 tsp. minced garlic
¼ cup bacon BBQ sauce
1 cup oatmeal
2 eggs

Instructions:
1.In a food processor, pulse the oatmeal a few times. Add to a large mixing bowl. Chop the bacon into chunks and then add to the food processor. Process until the bacon resembles ground meat. Add the bacon to the mixing bowl.

2.Add the ground pork, chorizo, onion, garlic, bbq sauce and eggs to the bowl with the bacon and oatmeal. Use your hands to mix the ingredients until incorporated.

3.Line a baking sheet with aluminum foil and then set a non-stick rack on the baking sheet. This will allow the grease to drip from the meatballs on to the tray. Use an ice cream scoop or melon baller to scoop meat mixture and roll into 1.5” balls.

4.Bake at 375° F for 13-15 minutes until cooked and the internal temperature of the meat balls is 165° F.
