Just in time for St. Patrick's Day, how about some brownies made with Guinness and loaded with Bacon!

Imagine the rich, creaminess of chocolate and Guinness Stout with smoky, crunchy bacon.

Here's a simple recipe for a delicious dessert.  These will make you a hero at a St. Patrick's Day party.

Ingredients:

1 lb. cooked, chopped bacon
2 boxes of brownie mix (we used Ghirardelli double chocolate)
2 eggs
2/3 cup Guinness Stout
2/3 cup oil
2 sticks softened butter
2 cups powdered sugar

Instructions:

Lightly beat the eggs in a large bowl. Add the Guinness and the oil and stir. Add the brownie mix to the liquid ingredients and stir until combined. Add half the bacon to the batter and stir again.

Pour the batter into a greased 9” x 11” casserole dish. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.

For the frosting, add the powdered sugar to the butter and whip with a hand mixer. You can add 2-4 Tbsp. of Guinness for even more stout flavor. Frost the brownies after they have cooled and sprinkle with the remaining bacon. Enjoy!
