5 Tbsp. finely-chopped red or sweet onion*
1 Tbsp. olive oil
2-3 Tbsp. Frank’s Red Hot Sauce
1 tsp. sugar
1/3 cup buttermilk
1/2 cup sour cream
1/3-1/2 cup cooked bacon, finely chopped
2 Tbsp. chopped fresh chives
1/2 cup crumbled blue cheese
Pinch of kosher salt plus more
Freshly ground black pepper
Heat olive oil in a small skillet over medium high heat. Cook onions until they start to become translucent, then set aside. Note: Red onions will give this dip a strong, tangy flavor. If you’d like a more subtle flavor, try using sweet onions instead.
In a medium bowl, whisk buttermilk, sour cream, Frank’s Red Hot Sauce, sugar until smooth. Fold in chopped onions, bacon, chives, and blue cheese until incorporated. Season with salt and pepper.
Cover dip and refrigerate for an hour so the flavors can mingle and get to know each other.
