Sweet & Spicy Bacon Glaze

This delicious glaze can be used with fish or chicken adding a spicy sweet flavor. Simple skinless chicken breasts go from bland to bold with this glaze. Served atop a bed of greens, this is healthy eating.

Marinade Recipe

1/3 cup balsamic vinegar

3/4 cup vegetable oil

3 Tbs brown sugar

2 Tbs steak seasoning salt

Glaze Recipe

6 slices bacon, chopped

3/4 cup honey

3 Tbs Worcestershire sauce

1 Tbs hot sauce (my choice was chipotle hot sauce)

Directions:  Put the marinade ingredients in a large zip lock bag. Add the chicken or fish to the marinade. Marinate fish no longer than 1-2 hours, chicken can be marinated longer, even overnight.  Remove marinated protein from bag and grill on medium-high heat. Discard the marinade in the plastic bag.

For the glaze, cook the bacon until it is crisp. Remove to a paper-towel lined plate to cool and then chop or crumble it and set aside.  *Drain the bacon fat from from the pan but do not clean the pan. Add the honey, Worcestershire and hot sauce.  Let bubble over medium heat.  Once bubbly, add the crumbled bacon.  Stir and cook for 1-2 minutes, or until it has thickened slightly.  Remove from heat, the glaze will continue to thicken as it cools.

Place the grilled chicken or fish on the bed of greens then drizzle the glaze over the protein.

*If you would like to make a salad dressing with the bacon fat, add a couple of extra slices of bacon when you are cooking the bacon for the glaze.  Put these extra slices aside for the dressing. After cooking the bacon, drain most of the fat from the pan but leave enough to saute 1 Tbs of onion (red onion, scallion, green onion ... your choice).  Once the onion is soft and transparent add 2-3 Tbs of red wine vinegar to the pan and stir until boiling, boil for about 1 minute. After cooling slightly, pour the dressing on top of the greens. A bitter green like endive, frisee or arugula work nicely with this dressing.
